Ingredients
-
1 Cup Unsweetened Cashew Milk
-
2 Medjool DatesPitted
-
1 Tablespoon Cocoa Powder
-
1/8 Teaspoon Extract Peppermint
-
1 Cup Cold Brew Coffee Concentrate or Espresso
-
2-4 tsp SugarOptional
Directions
This is like a peppermint patty dipped in coffee. It is thick and frothy and voluptuous! The chocolaty flavor might feel sinful, but unsweetened cocoa powder gives you a chocolate fix without the guilt.
Flavonoid-rich cocoa aids in lowering blood pressure and improving the elasticity of blood vessels. Cashew milk is widely available at grocery stores, and is a great alternative to almond and coconut milk, as it is creamy and smooth, but its flavor takes a backseat to the coffee. Along with an extra dose of phenols, the medjool dates give this drink body and sweetness that tastes truly indulgent without a speck of refined sugar.
If the dates are hard, and you don’t have a high-speed blender, we recommend covering them with hot water for 10–15 minutes to soften before blending.

NotesUse a high-speed blender for best results for this recipe as the dates need to be fully pureed in the milk. There should not be any date flecks in the milk after it is blended |
